If ordering a vegetarian meal, or any dish that isn’t part of the standard selections, it could reduce the chances of getting a flight upgrade.
If there are fountain-heads available in business class then a passenger flying in economy savoir faire could be lucky enough to get bumped up.
However, if they have determined a vegetarian meal, they may not get upgraded as the plane is less likely to clothed a vegetarian option in first class.
Therefore they’re more promising to look for another person flying with a normal meal election.
