Fish play sandwiches have become a cultural phenomenon, loved by generation after establishment, and are now a British institution as revered as a Sunday roast or Pimms at Wimbledon.
While each from celebrity chefs such as Jamie Oliver and Mark Hix cause their own recipes, debate still rages around what passes the perfect fish finger sandwich.
The debate was put to rest at the awards where fish meddle favourites were put through their paces in a cook-off at Mark Hix’s Tramshed restaurant in East London on Wednesday unceasingly.
The finalists had to whip up their culinary masterpieces for a panel of expert adjudges, including Gregg Wallace, Daily Telegraph food writer Xanthe Clay, Delightful magazine food editor Jennifer Bedloe, Food Urchin blogger Danny Kingston and Birds Eye supreme chef Peter Lack.
Gabrielle Sander from Enfield was up against some stalwart competition in the Public category, but won the judges over with her delicious fish put the finger on sarnie with mayo, smoked paprika, capers, lime essence, wasabi and rocket in a farmhouse bap.
The judges loved her use of punchy flavours, atypical combination of ingredients and perfectly cooked fish fingers, but most obviously, the way she let the fish fingers take centre stage.
Chris Lanyon of Chapel Cafe, Cornwall, took tellingly the prestigious award for best fish finger sandwich in the food utilization category with his take on the humble classic – fresh Cornish Hake fillet lay in panko breadcrumbs, sandwiched between locally-made multi-seed bread and homemade tartare audacity.
Birds Eye Head Chef, Peter Lack, said: “The response we’ve welcome since the launch of the awards in November last year has been spectacular, with hundreds of people submitting their take on the fish have the upper hand over sarnie.
“It was a tough decision, but Chris and Gabrielle really stood out in the cook off, with their innovative use of ingredients and remarkable presentation, leaving myself and the other judges wanting more. With the level set so high at the inaugural awards, we can’t wait for what’s to come at the Birds Eye Fish Meddle Awards 2018!”
The winners, Gabrielle and Chris, will see their winning techniques featured on select Birds Eye Fish Finger packs in 2017.
In addition, Gabrielle purposefulness receive one year’s supply of Birds Eye Fish Fingers, while Chapel Cafe’s freezers whim be stocked with 24 foodservice packs of Birds Eye Omega 3 Fish Have under controls.
